Chipotle BBQ Sauce

Prep Time: 5 Minutes

Cook Time: 25 Minutes

Yield: 2 Cups

♦ half of a yellow onion, finely chopped

♦ 2 Tablespoons butter

♦ 1 ½ teaspoons smoked paprika

♦ 1 teaspoon hot Hungarian paprika

♦ ½ teaspoon ground cumin

♦ ½ cup orange juice

♦ 4 Tablespoons sauce from can of chipotles in adobo

♦ 1 Tablespoon brown sugar

♦ 1 Tablespoon molasses

♦ 1 cup ketchup

♦ ½ cup water

♦ 1 ¼ teaspoons Kosher salt

♦ ½ tsp dried thyme

 

Melt the butter in a saucepan over medium heat.  Add the chopped onion and sprinkle with ¼ tsp. of the salt cook until the onions are translucent, stirring occasionally, about 5 minutes.  Add the smoked paprika, Hungarian paprika, and cumin.  Cook the spices with the onion for about 2 minutes, stirring constantly.  This will bring out the flavor of the spices so they don’t taste raw in the sauce.  Add the orange juice and cook for 5 minutes, stirring well to get any browned bits from the bottom of the pan.  Add the chipotle, molasses, brown sugar, ketchup, water, rest of the salt and thyme.  Reduce the heat to medium low and cook for another 10 minutes, stirring frequently.  Makes about 2 cups.
