Cajun Shrimp

Cook Time: 10 - 12 minutes
Serves: 4
♦ 1/2 cup extra virgin olive oil
♦ 2 Tablespoons Cajun/Creole seasoning
♦ 2 Tablespoons fresh squeezed lemon juice
♦ 3 Tablespoons fresh parsley, chopped
♦ 1 Tablespoon honey
♦ 1 Tablespoon soy sauce
♦ 1 Pound shrimp, peeled and deveined
Preheat oven to 450 degrees. Combine the first 6 ingredients in a glass baking dish. Toss the shrimp in the sauce and bake for 10 minutes, or until the shrimp is just cooked through. Remove from the oven and give the shrimp a good stir. Let sit for two minutes before serving. Serve with rice, pasta, or a loaf of crusty French bread.
*Please note that if you want to up the amount of shrimp to feed more people you definitely can, just make sure to increase the cooking time to about 3 to 4 minutes per half pound of shrimp.
