One Bowl Mediterranean Chicken

Marinade Time: 30 minutes
Cook Time: 60 to 80 minutes
♦ 6 bone-in skin-on chicken thighs, or 1 whole chicken cut into pieces
♦ 2 Tablespoons chopped fresh parsley
♦ 2 teaspoons chopped fresh dill
♦ 1 teaspoon chopped fresh oregano
♦ 1 teaspoon chopped fresh thyme
♦ the zest and juice from one ripe lemon (about 2 Tablespoons juice plus 2 teaspoons zest)
♦ 1 Tablespoon Dijon mustard
♦ 1 teaspoon honey
♦ 1 ½ teaspoons Kosher salt
♦ 1 clove garlic, smashed
♦ 1/3 cup extra virgin olive oil
In an oven proof dish, mix all of the marinade ingredients together thoroughly and then add the chicken pieces. Toss the chicken in the marinade, cover the dish with plastic wrap, and let it sit at room temperature for 30 minutes. Remove the plastic wrap, turn the chicken over in the marinade and make sure it is skin side up. Bake the chicken in a 375-degree oven for 60 to 80 minutes, depending on the depth of your dish and how much chicken you are using (6 thighs take about 70 minutes). Serve with lots of crusty bread to soak up the delicious sauce!
